Percy’s Cookery School provide a number of seasonal workshops all themed at “eating from the land around you”. Percy’s Country Hotel on the border of Cornwall and Devon is surrounded by 130-acres of rolling hills, gardens, wild woodland and lakes. This is an ideal location to learn about cooking from the land around you and an even better place to come and excape, relax and enjoy a break.

Cookery Workshops – cooking with the seasons

Tina is Devon’s number 1 female chef and her cookery courses are informative, inspirational, fun and hands on, teaching some fantastic tips and exciting recipes. Join us and learn to cook with fresh produce and meats of the seasons from our local farm and markets. Courses are spread over 2 mornings with 4 hours of tuition followed by a 2 course lunch. Our cookery packages can also include 2 or 3 night’s accommodation and the optional evening meals at Percy’s Restaurant.

Our cookery workshops are aimed at all levels of experience and ages. We run seasonal workshops throughout the year. Learn from the best, ask questions, get hands on experience and meet like minded people.

Game Cookery

- Tips on hanging
- How to pluck, skin and butcher your game
- Cooking techniques such as sealing, pulse cooking and resting time
- How to prepare a number of delicious meals
- Make stocks and gravies from the bones

Bread, Pies and Puddings

- Preparation techniques for handling fresh yeast and sourdough and kneading bread
- Different types of pastry and steamed puddings
- Cooking techniques, such as proving, griddle cakes, baking, meringues, baking pastry cases
- Delicious accompaniments such as fresh egg custard and toffee and whisky sauce

Other cookery workshops include Butchery and Sausage Making, which demonstrates how to butcher pork and lamb and how to prepare and cook the different parts, and Fish Cooking, which teaches how to buy fresh fish, how to prepare and bone and some delicious recipes.
